Description
This mild curry is cooked with aromatic Masala spices that are enriched with tomato and coriander and served hot with naan bread.

Indian Tikka Masala
Ingredients: 1 packet Indian Tikka Masala SpicePaste, 450g (1/2 lb) de-boned chicken meat, cut into bite-sized pieces, 1 tbsp yogurt, 1 tbsp vegetable oil, 1 large onion, coarsely chopped, 110ml (1/2 cup) water, 85g (3 oz) raisins and nuts or mint leaves as garnish
Method: Marinate chicken with SpicePaste and yogurt for at least 10 minutes. Heat oil in non-stick saucepan on medium heat. Add onion, stir fry until soft. Add marinated meat; stir fry for 3 minutes. Stir in water and bring to the boil. Simmer for 15 minutes or until cooked. Stir occasionally. Serve hot with naan bread or rice.
Variations: You may use other meat, fish, seafood or vegetable instead of chicken. Adjust cooking time accordingly. Double cream or yogurt can be added before serving.
