Ingredients (all available in our shop and online): Coconut oil for mixture and greasing https://www.mattas.co.uk/product/suma-organic-culinary-coconut-oil-320g/ 1 tsp vanilla extract https://www.mattas.co.uk/product/vanilla-bean-extract/ Coconut flour https://www.mattas.co.uk/product/mattas-coconut-flour/ 100g ground almonds and almond butter https://www.mattas.co.uk/country/u-k/?add-to-cart=1724 150g gluten or gluten-free flour of choice https://www.mattas.co.uk/product/gluten-free-plain-white-flour/ 80ml oat mylk https://www.mattas.co.uk/product/the-bridge-organic-oat-drink/ 2 organic apples, quartered, cored & thinly sliced

Recipe (Courtesy of All Recipes): Preheat the oven to 170 C / Gas mark 3. Brush around 22 cm (base measurement) cake tin with melted oil to grease. Line base and side with baking parchment. Beat coconut oil, coconut sugar & vanilla in a bowl for 8 mins or till pale and creamy (by hand or electric beater). Add coconut flour and water, beating well Stir in ground almonds and nut butter. Add half the gluten/gluten-free flour and half the oat mylk. Use a wooden spoon to stir until well combined. Repeat remaining flour and mylk. Arrange the apple, slightly overlapping, over the base of the prepared tin. Spoon mixture into the tin and smooth the surface. Bake in the oven for 30-35 mins or until a skewer inserted into the centre comes out clean. Set aside in the pan for 10 mins to cool slightly before turning onto a serving plate. Serve warm adding vegan cream to top it all! Serves 8 unless temptation gets the better of you 😎
