Wash beans in cold water. Put in a saucepan, cover with water, bring to the boil and simmer for approx. 2 hours until cooked. Add salt, pepper, lemon and olive oil to taste, or your favourite salad dressing. Can be used as a main meal vegetable, a vegetarian dish, included in salads or added to soups and stews. If beans are soaked overnight, then cooking will be quicker.
