These unusual noodles are made with black rice – a deep purple coloured rice with a nutty flavour which is rich in minerals and fibre.
Try these noodles with mixed mushrooms lightly fried with garlic and spring onions. Add tofu or a little meat as required.
Wheat and gluten free.
