Savoury Paste Made from Soya Beans and Barley
Simple Miso Soup
Bring 250ml water to the boil with a few dried mushrooms, some garlic, and a slice or two of root ginger. Simmer for 3 min, draw off the heat and add one heaped tbsp. Sanchi Mugi Miso and stir to dissolve but do not boil. Adjust seasoning and serve. Other vegetables can be added at the start and simmered until cooked before adding the Miso.
Soya beans, barley cultured with koji, water, sea salt.
