Fish Madras Curry (Serves 4)
1. Blend 2tbsp of Rajah Mixed Curry Powder with 3tbsp water to make a paste. Combine with 2tsp of ground ginger, 2 tbsp of ground garlic and 1tsp of salt.
2. Heat 1tbsp of oil and fry paste until fragrant and add 500ml of tamarind liquid. Bring to the boil and add 4 cod steaks to cook for 4 minutes.
3. Add 3 tbsp of coconut milk, 1 tsp of sugar and simmer for 2 minutes. Ensure fully cooked before serving.
